The Sauté Solution
by Jackie Skelton

You're no slave to the kitchen.  The oven is where you keep the telephone book.

If you've only been to the cooking store once, and that was to buy the conical sieve for your hat to the Tin Man
costume, I've got to let you in on a really big secret: Sauté.

No fancy cookware necessary.  No gourmet ingredients.  It's just a simple process of rapidly cooking meat and
vegetables in a small amount of fat.

After answering “YES” to the age-old question, “Can I sauté while wearing long black gloves?”, probably the
most important tip I can give you is this: Learn the basics of how to sauté properly.  The beauty of learning a
basic technique is that once learned, you're able to create original recipes and fresh meals on a moment's
notice.

Including the prep time of chopping up meats and veggies, I can usually have a sautéd gourmet meal on the
table from start to finish in about 15 - 20 minutes.
